When you have broth in the freezer, it’s easy to whip up a delicious, nourishing pot of soup. Bone broth is inexpensive to prepare and full of minerals and other essential nutrients. Check out my free bone broth guide.

This is a very easy cauliflower soup. If you know how to cut up a cauliflower, you can turn broth into a mouth-watering soup.

Preparation time: 5 minutes

Start to finish:  20 minutes

Ingredients

1 cauliflower

1 small carrot

Approx. 1 cup broth

Salt to taste

Chopped parsley as a garnish

Let’s Cook

1.    Cut the cauliflower into small florets and place in a 3 liter (3 quart) pot.

2.    Add about a cup of bone broth and fill the rest of the pot with water

3.    Grate a carrot and add to the pot. Bring to the boil.

4.    After the soup boils, let it cook for only about 5 minutes, so the cauliflower still has a little bite to it.

5.    Add salt and chopped parsley to taste.

Enjoy!

    It is funny to me how terminology has changed over the years. I first heard the term “bone broth” from my nutritional therapist. I asked her what that was and turns out it is stock. The only thing that is in your recipe that I had never added before is the vinegar. Otherwise, roasted chicken becomes broth, sometimes I don’t roast and just take the bones, skin, fat and into the pot. Have been doing this for at least 40 years.
