Start with 6 organic beets.
Wash beets thoroughly and chop off the ends.
Wrap in foil and bake in an aproximately 200 Celsius (400 Fahrenheit) oven until soft (1 1/2 to 2 hours).
Tip: Put them in the oven when you’re baking something else.
slice or grate
Add a clove or two of crushed garlic…
… and chopped parsley.
Dress with a simple olive oil and vinegar vinaigrette and a bit of salt to taste.

P.S. If you’ve never eaten beets before, you may be in for a bathroom surprise. Don’t worry, beeturia is harmless.
