Easy Beet Salad – Simple and Delicious

Easy Beet Salad

Start with 6 organic beets.

Fresh beets

Lovely fresh beets from my CSA.

   Wash beets thoroughly and chop off the ends.

Cleaned up & ready for the oven.

Wrap in foil and bake in an aproximately 200 Celsius (400 Fahrenheit) oven until soft (1 1/2 to 2 hours). 

Tip: Put them in the oven when you’re baking something else.

slice or grate

Sliced beets

Add a clove or two of crushed garlic…

… and chopped parsley.

Chopped Parsley

Dress with a simple olive oil and vinegar vinaigrette and a bit of salt to taste.

Vinaigrette – yum!

Serve chilled.

P.S. If you’ve never eaten beets before, you may be in for a bathroom surprise. Don’t worry, beeturia is harmless.

    I roast beets often, and they are generally done within 45 minutes to an hour, even the large ones. I test for doneness by sticking a knife into the beet. If it slips in easily, they are ready.

      Hi Dawn,
      You roast them (heat only coming from above) rather than bake them? I have to try that. I’ve always baked them.

  2. Liking some of your recipes but they have no ingredient measurements….Also “simple vinaigrette has absolutely no instructions.

      Hi Lorraine,
      Thanks for commenting. Most recipes do have a formal list of ingredients at the beginning, but some, like this beet recipes, are so simple, that the quantities are listed with the method. I added a link to a basic vinaigrette recipe.
